Has anyone canned (in jars) meats and or stews. I'm curious as I'm thinking of trying to preserve chili and gumbo in canning jars rather than freezing them.

Cool,I may try canning the chili. I'm sure you're already aware Gumbo spoils so easy, I can try canning it but I'd need a brave volunteer to try it afterwards to make sure its safe. LOL

OH OH OH ME PICK ME !!!! I can just about every thing.
I make my own jellies and can beans chicken deer meat and chili I can chili in the small jelly jars so I can just open one any time I want a bowl of chili with out making the whole big pot.

This is the one i started on and got hooked on canning! The wife is starting to complain because I have so much stuff canned now! I gave home made jellies to all my neighbors this year for Christmas.

I really enjoy canning I have spent many a rainy day or snow day canning all day long! I now have to build some new shelf's in the laundry room before the wife kills me!

Longrange, That is an awesome video. Do you use a pressure canner for the meats and chili's? I really appreciate your input on this.

Yes I do I have 2 a smaller one 3 to 4 jars and a big one that takes 6 large jars. Canning meat does scare some folks pressure cooker and all and it is meat not in the frig! But it is better then frozen if you ask me. You will need one for green beans also. And just go ahead and get the bigger one you will need it anyway and can do small stuff in it also. You do not need the kind with the gauge on it a shaker works just fine.

Cool! I'm just finding comments about soups or gravies w/ flour or starch and they don't can well,

Gumbo is mainly a roux which is 1/2 flour and 1/2 oil. I've found posts saying not to try canning gumbo. Oh well.

Anything with yeast in it will not can well those little boogers keep gowning and eating!

The money you can save canning is unreal I have not bought a can of green beans in 2 years. And the wife had some out of a can at her Moms last week end and asked why they tasted funny! She told me later she likes the ones I can so much better!

When I can mine I put some dried onions and a half a piece of bacon in each jar she swears they rock but I just can't eat them never could.

Oh and a touch of garlic salt in each also
