Time for traditions, dried lamb, steamed for 3 hours, then finished in the owen for 30 minutes, served with some good western Norwegian sausage.

Round Steak and Gravy.
1 round steak cut and seasoned. This is the only seasoning I add.

Brown it well, very well, you want all the goodies on the bottom of the pot
that'll give the gravy or jus its color

add water to cover the meat by at least an inch.

Add 2 onions diced then minced garlic

Bring to a boil then reduce to a simmer, cover and let the gravy reduce, 1-2 hrs.
Check it often, if it needs more liquid go ahead and add it. You can reduce it as many
times as you need, usually 2 or 3 times for us.

If serving over rice leave the meat in larger pieces.

We decided on sandwiches so we just just press the meat with a wooden spoon
and it just falls apart.

Served on a hoagie roll with mayo and pepper-jack cheese.

Due to lack of supply, and increased demand from TheMrs., And against
all cajun traditions that gumbo is cold weather fare. I cooked a Gumbo.
Start with a roux.

When its about right.

Add 3 large onions and 3 bell peppers diced.

Stir well to coat with the roux, then add your water or stock, we use turkey and chicken stock.
Image
Stir until the roux is completely incorporated, increase to a slow boil and add 2 lbs cubed and seasoned chicken.

After it comes back to a simmer or slow boil, add 2 lbs sausage, this was jalapeno smoked beef sausage.

After it comes back to a simmer, we added 1 lb cubed smoked turkey breast.

Bring to a simmer and cover, after an hour or so, check if more liquid is needed and if any more seasoning
is needed.

Let it simmer as long as needed till eating time.
Served on rice with potato salad made with fresh picked potatoes, baked sweet potato, and a side of okra.
